Equipment:

Directions:

  1. Clean and remove pits from plums. Add to a large bowl and macerate with 2 cups of sugar. Let’s stand for 30 minutes while sanitizing glass containers and lids.

  2. Wash glass containers and lids with soap and water, rinse-off soap, place in warm water, bring to a boil then turn off heat. Leave in water until ready to can.

  3. Pour plum sugar mixture into your dutch oven, bring to a boil while mashing with a potato masher. Scrape off the scum with a spoon, reduce heat to a simmer, simmer until thick - about 20 minutes.

  4. Remove canning jars with lids from boiling water, set on a towel, fill with plum jam. Remove lids from boiling water, careful not to cross contaminate, screw lids on and place back into water. Bring to a boil for five minutes, remove from heat and let sit for five minutes.

  5. Transfer to drying rack wipe dry, shelf life up to 12 months refrigerator, if canned correctly. The lid should suction down and you will hear a pop sound if you are lucky. Once opened, keep in the refrigerator and use within seven days. Enjoy!
