Yogurt is the secret ingredient for perfect grilled chicken. Marinating in yogurt slowly tenderizes and penetrates the chicken with the full flavor of your marinade. This is a perfect backyard barbecue chicken recipe so you can feed a party or your family for lunch and dinner.
This recipe is designed for a charcoal or propane grill! You could go with boneless skinless chicken thighs, skewer, and grill over an open flame. Adjust the ingredients to fit your pallet. You can also garnish with sliced red onion and cilantro or top with our Sweet Heat Chili Crunch recipe. Caramelized grilled chicken is easy, cheap, tender, juicy, and packed with flavor.
3 chicken quarters
2 cups plain yogurt
6 cloves garlic, minced
2 tablespoons minced ginger
1/2 a yellow onion, minced
1 lemon, juiced
1/4 cup HLM BBQ Back Rub (or your favorite seasoning)
1 teaspoon ground cumin
In a large nonreactive bowl combine yogurt and all other ingredients besides the chicken legs. Mix well and set aside.
Break down chicken quarters into 3 drumsticks and 3 thighs (adjust based on the crowd) and make two slits into the chicken meat, to the bone, to allow the marinade to penetrate deeper.
In the bowl of marinade, add the chicken, and coat thoroughly in the yogurt marinade. Let marinate for 4 to 6 hours. No longer, otherwise, the chicken will start to break down from the yogurt enzymes.
Two-zone cooking method, direct grill the chicken until starting to char then place on the indirect heat side and cook until the internal temp is at least 165°F.
Serve as is or with a side of Sweet Heat Chili Crunch. Optional: garnish with thinly sliced red onions and cilantro.
